Now, I’m definitely no cake baking expert, and the only experience I have of making cakes was during the national lockdown - when every man and his dog was baking.
But I thought, hey it’s Easter, why not put on the apron and return to the kitchen and create an extraordinarily budget-friendly cheesecake for me and my family to enjoy.
And as we say goodbye to the cold weather and hello to a sunny Easter weekend, what better way to celebrate than to make a delicious dessert.
I baked a Nutella and white chocolate cheesecake and followed a similar recipe to Nigella Lawsons Nutella cheesecake – but added a little chaotic energy overflowing with chocolate toppings.
I am pleasantly surprised with how well the cheesecake turned out - apart from forgetting to sieve the icing sugar and disregarding the greatest Easter topping known to mankind (mini eggs) – other than that, I’m pretty pleased with myself.
Cheesecakes are an effortless dessert, and a fantastic way to bake on a low budget – depending on how many toppings your heart desires, you could easily make an entire cheesecake for less than a tenner.

My Lidl receipt for the entire list of ingredients totalled at £15 – but almost half of this was made up from the dozens of toppings I chose.
The preparation time took around 25 minutes – not long at all for creating a masterpiece.
I had so much fun making the cheesecake, and without turning on the oven once, it’s a great and simple way to make a tasty cake.
Here is how I made my Easter themed Nutella and white chocolate cheesecake.
Servings: 6 – 8 slices
Ingredients –
300 grams of Digestive biscuits
Five tablespoons of unsalted butter
Half a cup of caster sugar
Two large tablespoons of Nutella
180g of white chocolate
400 grams of cream cheese
Easter toppings –
Chocolate Easter bunny
2 x Malteser bunnies
Pack of tiny eggs
Smarties
Pack of cream eggs
Pack of Daim eggs
180g white chocolate bar
1 x Reece’s peanut butter egg
Baby chick cake toppers
Method –
Step 1: Crush up the digestive biscuits until crumbled
Step 2: Add the unsalted butter to the biscuits and mix until the butter has dissolved
Step 3: Put the biscuit base into a cake tin and pat down to form a neat circle
Step 4: Melt the white chocolate
Step 5: Whisk together the cream cheese, caster sugar (sieved) and white chocolate in a bowl
Step 6: Add the two tablespoons of Nutella to the creamy filling
Step 7: Pour the filling on top of the biscuit base and smooth out any edges
Step 8: Leave in fridge for 3+ hours
Step 9: Add your selections of toppings and decorations
Step 10: Enjoy!
