Ingredients (makes 1)
Fresh mint leaves
1 shot cane syrup
Crushed ice
1 shot Cognac
Chilled Champagne/Cava/sparkling wine
Lemonade to top up (optional)
Method
Put 8-10 mint leaves in a tall cocktail glass with the syrup and muddle gently. Add crushed ice, pour in the Cognac, then add the sparkling wine and stir. Top up with lemonade for a lighter drink. The Cognac can be substituted with Grand Marnier for a slight twist.
