Jazz up your packed lunches for 2015 with some fruity grapefruit muesli bars.
Makes 12
Ingredients:
180g butter
180g light brown sugar
4 tablespoons golden syrup
375g porridge oats
50g cornflakes
50g mixed nuts, roughly chopped
50g sultanas or raisins
1 Florida grapefruit
200g icing sugar
Method:
You will need a lightly buttered roasting tin or deep baking tin measuring 20x25cm
Preheat the oven to 180C/gas 4. Lightly butter the roasting or baking tin.
Melt the sugar, butter and golden syrup together in a small saucepan. Stir in the oats, nuts and raisins. Coarsely grate the grapefruit zest, add it to the mixture and stir until everything is evenly mixed.
Spoon the mixture into the prepared tin and baked for about 25 minutes, until golden and firm. Leave to cool for 10 minutes, and then cut into bars. Leave to cool completely and transfer them to a cooling rack.
Cut the grapefruit in half and squeeze the juice from just one half into a small bowl. Add the icing and stir until smooth. Drizzle the icing over the bars and leave to set. Store in an airtight tin.
