THE QUEEN prefers fruitcake, James Bond was a carrotcake fan and Sir Paul McCartney opts for chocolate.

Described by Gordon Ramsay as “The Bentley of Cake Makers”, Mich Turner MBE has created bespoke sweet treats for each of them as well as the likes of Barack Obama, Madonna and Cheryl Cole.

The owner of Little Venice Cake Company was at Intu Bromley, formerly The Glades, on Saturday, June 15, to share tips to her intricate creations.

Talking to Vibe about the enduring popularity of cake, she said: “It is not fuel - it is something pleasurable.

“If it was an item of clothing it would be a party dress.

“It is something very nurturing for the soul.”

And the joy of making it, she said, was a sense of pride.

She said: “When people make a cake they are incredibly proud. It is a very cool thing to be able to say you baked a cake.”

Mich takes her craft seriously and elevates it to the level of art.

She said: “My approach tends to be quite scientific, quite mathematical, and quite symmetrical with very fine detail and attention to detail.

“Inspiration tends to come from fashion, architecture, history, vintage costume and jewellery – those kind of elements.”

With so much craft going into each cake – the are booked as far as nine months in advance and she meets with customers for hours before designing them - it must feel odd seeing them getting eaten, I suggest.

“I rarely get to see them cut into,” she said. “When I leave a cake it is set up in the grandest of venues wherever they are in the world.

“As I take my photograph and leave the room, I’m gone. I rarely get to see them cut and eaten and enjoyed. For me, most of my collection remains as those beautiful masterpieces in my head.”

Decoration is one thing, but flavour is everything for Mich.

She said: “A cake is a feast for the eye but it will only be truly memorable if it satisfies on flavour. It is the taste that has to linger.”

And there is no such thing as a classic chocolate cake for the expert.

She said: “We have a number of cakes and they all hold up very well. We do have a chocolate truffle torte that a lot of people enjoy but just as much our Madagascan vanilla cake is out of this world.

“We made carrot cake for Pierce Brosnan’s wedding, Paul McCartney had chocolate, the Queen had fruit cake. We made a sort of date cake, which had English apples with lemons and sultanas.

“There is no classic.”
